The art and preparation of food is as much a part of the Basque Country as are its green hillsides, its wave-beaten shores, its language and its folklore. The development of our kitchens has run parallel to the long history of visitors to our country. Basque cuisine began to earn international acclaim in the belle époque of the early twentieth century. |

The farmhouses safeguard culinary treasures which combine ancestral methods with foreign contributions. This age-old tradition has given birth, particularly in the past twenty-five years, to a new culinary culture whereby chefs and cooking schools have revolutionised the tradicional recipe books, creating the world's highest concentration of outstanding gourmet restaurants per capita.
Culinary tradition in Santurtzi Basque cuisine is another of our strong points. There is an outstanding offer available in local restaurants. The irresistible aroma of sardines, freshly grilled over the embers, mingles deliciously with some of the region's most typical meals: fresh fish, fine meat and vegetable produce—the key to the success of dishes carefully prepared to delight even the most demanding palate.
“Tapas” As in all cities and towns in Euskal Herria (The Basque Country), a great tradition of social drinking exists. People gather to drink txikitos (glasses of wine) and eat pintxos (tapas or canapés) in bars, taverns and restaurants. This pub-hopping area is known as "la Txitxarra" and is found in Genaro Oraá Street and general vicinity. In this sense, other important streets are: Capitán Mendizabal (popularly known as "the street of the dollar") and Juan XXIII.
